I made my first, completely from scratch, cake the other day! It was a Triple-Layer Lemon Cake with Lemon Cream Cheese Icing from the Pink Plaid cookbook and Man was it good!!!! We had my parents-in-law and my friend Shannah over and they all liked it too. Sheralyn, my mother-in-law, even said she wanted it to be her birthday cake.
Here's the recipe
Triple Layer Lemon Cake
1 c. butter softened
4 eggs
2 1/3 c. flour
1 ½ tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
2 c. sugar
2 tsp. finely shredded lemon peel
2 tbsp. lemon juice
1 c. buttermilk
Lemon curd (I bought it already made but you can make it)
- preheat oven 350 degrees F
-Allow butter and eggs to become room temp.
- Grease and flour 3 round cake pans
- mix flour, baking powder, baking soda, and salt and set aside
- beat butter and sugar together
- add lemon peel and juice
- add eggs one at a time
- alternately and flour mixture and buttermilk
- beat on low speed until well combined
- bake for 25-30 mins or until toothpick comes out clean
- let cool on wire rack
- to assemble stack layer on top of each other spreading curd in between the 3rd and second layers as you go. Then liberally ice with lemon cream cheese frosting
Lemon Cream Cheese Frosting
1 tsp. finely shredded lemon peel
6 oz. cream cheese
½ c. butter softened
1 tsp. lemon juice
4 ¾ powered sugar
-Combine peel, cream cheese, butter, and juice
-Gradually add powdered sugar until well combined
